After being away for 2 weeks and eating out or having others cook for us, it is time for me to get back in the kitchen. Tonight I am preparing a Pork Roast tenderloin with dressing, gravy,acorn squash and mixed veggies.
I just took a fabulous sugar cookie recipe off The Pioneer Women site and think I will bake some up for supper.
I took a cookie decorating class in July so I'm excited to see what I can do ! Will post pictures if all goes well.
My husband and I live in Texas and our daughter, Sarah has moved back to "Our home and Native Land," Canada, to attend Law School. I am now in the process of teaching her how to cook while she is 3000 miles away from home....pray for me!!!

Pictures of Banana Muffins
Chocolate Chip Banana Muffins
1/2 cup butter
2 eggs
3/4 cup sugar
3 ripe/frozen bananas
1 tsp vanilla
Put all in a mixer and walk away and let it mix and get nice and creamy
In a large measuring bowl:
2 cups flour
1 tsp baking soda
1 tsp salt
1 cup choc chips
Add dry ingredients ONLY until incorporated, add chips and stir by hand
Line a muffin tin with papers
Bake 350* for 20-25 mins, check after 20 mins

Pasta Milano
Pasta Milano-serves 4
2 gloves of garlic, minced or 2 tsp from the jar
1/4 c olive oil
1/2 pound chicken breast strips
3/4 c sun-dried tomatoes
1t fresh basil or 1/2 t dried
pinch of red pepper
1/4c white wine
3/4 c chicken broth ( you can use cubes and reconstitute to 3/4 cup)
1/4c cream
1T butter
1/2 pound bow tie pasta
grated cheese, Parmesan
Get a pot of boiling water going on the stove
Once it boils, add pasta and cook for 10 mins
Cut up tomatoes,basil and set aside.
In a large skillet, cook together garlic,oil and chicken.
Add butter, saute a little
Add all other ingredient, EXCEPT pasta and cheese.
Let this all simmer for 15 mins to blend flavors
Add the cooked pasta here and simmer for 5 mins for a total of 20 mins.
Top with grated cheese

Lonely Bananas
Dearest mother of mine,
I have problems.
#1. I have three lonely frozen bananas in my freezer and I don't know what to do with them. HELP.
#2. Matt is coming to see me in less than two weeks :) :). HOWEVER, when I told him that he could just relax when he was here and let me take care of him he laughed. He then said something about having to go to Tim Horton's every morning for breakfast (which I am not opposed to) but when I told him I would cook him breakfast, he laughed again. And I don't mean a little chuckle, this was a whole hearted, full body laugh.....Awesome. The boy doesn't even think I can cook a freaking egg!! (I'm assuming you are laughing right now considering I just recently asked you how to boil an egg, but now I know haha)
Long story short, I need to know how to cook something easy, but amazing. That'll shut him up :) What about the pasta milano recipe you have? We're going for not complicated here. I'm going to try to pretend I don't have the cooking skills of a 5 year old while he is here. Wish me luck....

Butterscotch confetti squares
1/2 c butter( use the butter wrapper to grease the pan)
1 pkg butterscotch chips
1 c peanut butter
1 bag colored mini marshmallows
. Melt butter, chips, and peanut butter in microwave for 2 mins on medium power.
**Never use high power for chocolate or protein in the microwave.**
.Stir
. Microwave 1 min on medium at a time and stir until everything is melted and smooth
Add the marshmallows and pour into a 8X8 or 9X9 greased pan.
Smooth out the squares by pressing saran wrap over the top, leave the saran wrap on and put in the fridge to set up for a couple of hours.
ENJOY!!

homemade mac n' cheese
Key
t = teaspoon (small)
T = Tablespoon (BIG)
c = cup
mins = minutes
Let's get started
*get your pot of water boiling on the stove
* measure out 2 1/2 - 3 cups elbow macaroni
* grate 2 cups of cheese (cheddar/mozza/colby whatever you have)
*in a big micro safe bowl add:
1/4 c butter
1/4 c flour
1 t pepper
1 T mustard (should be dry mustard, but that's too expensive so you use wet mustard in the squirt bottle)
* micro 1 mins and mix well
* check the water, if it's boiling add the macaroni
* now add 1 3/4c milk to micro bowl
* mix really well
* micro 2 mins
* go stir macaroni on the stove
* stir milk mixture really well and get all the stuff from the sides incorporated
* 2 more mins in the microwave
* macaroni should almost be done, if so drain
* if the milk mixture isn't quite thick enough, 1 more minute in the microwave
* add cheese a little at a time and stir
* after all the cheese is in...taste and add salt here.
*add the drained macaroni, stir
* now everybody in the microwave for one more go'round for 5 mins

Ok, I'm making this request now so you actually have time to do it, because I'm serious:)
For my 22 birthday I would like a cookbook from you. For REAL! With everything good in it. It can be your practice for your real cookbook! Not just recipes either, put all those stupid things in there too that you know I can't figure out on my own. For instance,how to properly boil an egg (stop laughing right now!) I feel like that's really easy to screw up.
Oh this is brilliant. K you've got approximately 3 months. Ready set go!

So I'm super bored so I've been looking up recipes all morning and I got on this page that had recipes all using tuna, which got me thinking about that really yummy tuna casserole thing you made with the noodles. Or maybe it was chicken? I don't know., but whatever it is, it's insanely good. Therefore, I need the recipe for it! I hope you know what I am talking about! I think you make it with egg noodles? Oh geeze, now I really want to eat it. Like right this second! haha
I'm going to start needing all your good recipes! So start sendin away!!
You should make a cookbook. Like a real one, publish it and become rich and famous. It's perfect. I think you should do it. And for practice you should start sending me all the good ones. Your cookbook can be all about how you taught your daughter how to cook from 3,000 miles away while she's at Law School. THAT CAN BE THE TITLE! wooooo. Take all the good recipes,make them easy and BAM!! NY TIMES BEST SELLER. You should probably do this before Oprah finishes her show so you can be on it.
